Watermelon, Ginger & Lime Agua Frescas! This refreshing fruit drink is made simply of blended watermelon, lime juice and The Ginger People’s Organic Fiji Ginger Syrup. It’s a creative alternative to maple syrup and great for mocktails, smoothies, baked goods, or to drizzle on your morning pancakes. I love the entire product range of The Ginger People (they’re a dream come true for ginger lovers) and am excited to partner with them to bring you these Agua Frescas.

The ginger-spiced syrup is the perfect sweetener to the refreshing tang of the lime and watermelon. The flavors work together so perfectly; the watermelon is the most pronounced, followed by a subtle kick of sweetness and ginger. I love this drink since it's so easy & refreshing

A few things to note:

  • If you don’t have ginger syrup, you can swap it out for maple syrup and a pinch of ground ginger. However, the ginger syrup has the perfect balance of spice, sweetness, and subtle ginger flavor, which you may not be able to achieve otherwise.

  • Warm the mint briefly in your palm to release the oils before tucking the sprig into the glass. This will allow the mint to serve not only as a garnish but also contribute to flavor!

  • You can use sparkling water, soda or plain water instead of coconut water.

  • If you want the watermelon flavor to be more pronounced, you can add up to 1/3 cup of watermelon puree. I used freshly pureed watermelon rather than a pre-packaged variety.

Watermelon, Ginger & Lime Agua Frescas! This refreshing fruit drink is made simply of blended watermelon, lime juice and The Ginger People’s Organic Fiji Ginger Syrup.

Ingredients

  • 2 tbsp lime juice (1 tbsp per glass)
  • Pinches of flaked salt, per glass
  • 2 tbsp The Ginger People's Organic Fiji Ginger Syrup
  • 1/2 c pureed watermelon, divided (around 100 ml, 1/4c per glass)
  • 2 sprigs of mint, per glass
  • Coconut Water, as needed
  • Ice, as needed

Instructions

  1. Add the flaked salt and lime juice to each glass and let sit for 30 seconds.
  2. Add the ginger syrup, blended watermelon (1/4 cup per glass) and as much ice as you can fit into the glass. Top with coconut water until the glass is filled to the rim (pro tip: adding the water after the other ingredients will achieve the pink gradient effect).
  3. Briefly warm the sprigs of mint between the palms of your hand (this will bring out the oils) and then tuck them into the sides of the glass.
  4. Top with extra mint leaves and watermelon, if desired, and enjoy!
