Sourdough cheese crackers — golden, crisp, and so snackable you’ll wonder why you ever bought a box.

For the second round of my With Love, Meghan recipe recreations (remember the floral ice cubes from Season 1?), I went savory: these sourdough cheese crackers, adapted from Netflix Tudum. They’re crisp, tangy from the discard, and loaded with sharp cheddar — basically Cheez-Its with a glow-up. Honestly, if this is what Meghan is making, Archie and Lili must have the best snack stash in Montecito. They’re quick to pull together, perfect for using up starter discard, and dangerously easy to eat by the handful.
Sourdough Cheese Crackers
Ingredients
113 g sourdough starter discard
30 g water, plus more as needed
113 g all-purpose flour, plus more as needed
100 g sharp cheddar cheese, loosely packed and shredded
45 g butter, melted (plus extra for brushing)
3 g kosher salt
25 g Parmesan cheese, finely grated
Flaky sea salt, to finish
Method
In a large mixing bowl, combine the sourdough discard, water, flour, cheddar, Parmesan, melted butter, and kosher salt. Mix until the dough comes together, then knead gently by hand until smooth and cohesive. The dough should feel soft but not sticky. Add water (1 teaspoon at a time) if too dry, or flour if too wet.
Place a sheet of plastic wrap on your counter. Press the dough into a square, wrap tightly, and refrigerate for at least 45 minutes to firm up. (It can be chilled for up to 2 days before baking.)
Preheat the oven to 350°F (175°C).
Divide the chilled dough in half. Place each piece between two sheets of parchment paper and roll out to about ⅛-inch thick. Peel off the top sheet of parchment and transfer the bottom sheet (with the dough on it) to a baking sheet.
Cut the dough into 1 ¼-inch squares with a sharp knife, pastry cutter, or pizza wheel. Use a toothpick or chopstick to prick the center of each square so they bake flat.
Brush the tops with melted butter and sprinkle with flaky sea salt.
Bake for 20–30 minutes, rotating the pan halfway through, until the crackers are golden brown and crisp around the edges.
Turn off the oven, crack the door open, and leave the crackers inside for another 15 minutes to cool and dry out fully.
Let cool completely before enjoying. Store in an airtight container at room temperature for up to 2 weeks.
