One cookie, no eggs, no sharing.
This cookie has no friends—because it doesn’t need them. It’s a single-serve treat, baked just for you, and unlike most one-off cookie recipes, it won’t leave you cracking an egg only to wonder what to do with the rest. No yolks, no halves, no waste—just a few pantry staples, melted butter, and a generous handful of chocolate. The result is a warm, chewy cookie with crisp edges and a soft center, ready in minutes. Perfect for late-night cravings, small victories, or anytime you deserve a cookie all to yourself.

1 Tbsp unsalted butter, melted
1 Tbsp light brown sugar
1 Tbsp caster (superfine) sugar
½ Tbsp milk
3 Tbsp all-purpose flour
Small pinch of baking powder
Small pinch of baking soda
Small pinch of sea salt
2 Tbsp chopped dark chocolate or chocolate chips

Mix wet ingredients: In a small bowl, stir together the melted butter, brown sugar, caster sugar, and milk until smooth.
Add dry ingredients: Sprinkle in the flour, baking powder, baking soda, and salt. Mix until a soft dough forms.
Fold in chocolate: Stir in the chopped dark chocolate until evenly distributed.
Shape: Form the dough into a ball and place it onto the prepared tray. Flatten slightly with your palm.
Bake: Bake for 10–12 minutes, or until the edges are golden but the center still looks soft.
